Walnut and Maple Granola with Roast Strawberries

2 cups walnuts
2 cups oats
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/3 cup flaxseeds
1 cup puffed quinoa, rice or amaranth
2 tablespoons maple syrup
3 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon vanilla essence or paste
1/2 cup coconut flakes/shards

Roast strawberries
2 punnets of strawberries
Juice of 1 orange
1 tablespoon maple syrup
1 teaspoon vanilla essence or paste

  1. Preheat the oven to 180°C and line a large baking tray with baking paper.
  2. In a large bowl, stir together all the granola ingredients except for the coconut flakes.
  3. Spread out on baking tray and toast for 15-20 minutes, stirring every few minutes from 10min onwards to ensure it bakes evenly. In the last minute of baking, add the coconut flakes until just starting to brown (these brown very quickly). Leave to cool completely then transfer into an airtight container or jar.
  4. To make the roast strawberries, combine all the ingredients in a baking pan. Roast for 20 minutes or so, stirring occasionally, until juicy and soft.
  5. Serve up with your choice of yogurt and milk.
