Tahini Spiced Walnuts with Comte and Honeycomb

2 1/2 cups walnuts
4 tablespoons brown sugar
2 tablespoons tahini
2 tablespoons olive oil
1/2 teaspoon whole cumin seeds, crushed in mortar and pestle
1 teaspoon whole coriander seeds, crushed in a mortar and pestle
1 teaspoon Aleppo pepper
1/2 teaspoon salt
fresh thyme sprigs
200g Comte cheese
fresh honeycomb
fresh bread or crackers to serve

  1. Preheat the oven to 180°C. Line a baking tray with baking paper.
  2. Stir the walnuts, brown sugar, tahini, olive oil, spices and salt together in a bowl until evenly coated.
  3. Transfer to baking tray and roast for about 10 minutes until fragrant and golden.
  4. Leave to cool, then plate up with Comte, honeycomb and toasted bread or your choice of cheeseboard additions.
