1 1/2 cups Aussie walnuts, shelled
1/4 cup sugar (the plain white granulated kind)
50g unsalted butter
Heat a medium frying pan over medium heat, add 1/4 cup granulated sugar and 1 Tbsp butter. Once mixture is fully incorporated, add walnuts.
Heat walnuts over medium heat for 5 minutes, stirring frequently with a spatula to ensure the nuts do not burn. When the walnuts begin roasting, stir constantly until all sugar is melted and nuts are coated with the caramelised coating.
Once the walnuts have caramelised, transfer immediately onto a sheet of baking paper and separate the nuts to avoid them sticking together. Use two forks or spatulas to separate as the nuts will be very hot.
Once the caramelised coating hardens (5 minutes), transfer to a bowl/platter to enjoy immediately or transfer into a sealed container in the fridge for up to 4 days.
