Roasted and Salted Australian Walnuts

400g Aussie Walnuts, shelled
Murray River Rock Salt, to taste
30ml Extra Virgin Olive Oil

Preheat oven to 160 degrees. Spread shelled walnuts on an ungreased baking tray in an even layer. Toast the nuts in the oven 10 to 15 minutes or until lightly browned. You will need to stir the nuts occasionally to evenly toast. Remove the tray from the oven and place the extra virgin olive oil over the nuts, stir until the walnuts are glossy and evenly covered. Add the salt and stir until evenly salted. Allow to cool before serving.
