Walnut and Roasted Pumpkin Dip

500 grams pumpkin, chopped in cubes
Olive oil
2 teaspoon smoked paprika
2 teaspoon of cumin
2 teaspoon of chilli flakes
70 grams walnuts
250 grams Philadelphia cheese
Salt + Pepper

Line a baking tray approx 17cm x 11 cm with baking paper.

Place pumpkin on tray, drizzle with olive oil and season with salt + pepper. Mix and bake for approx. 45 minutes till golden brown. Allow to cool before adding any ingredients.

In a food processor place Philadelphia cheese and spices, season to taste. Blend till smooth. Add the walnuts and blend until you reach a course texture. Place in a bowl, sprinkle with some chilli flakes.

Best served chilled with our walnut seeded crackers.
