The Amazing Walnut Cheese Ball

Serves approx 15 people 

250 grams Philadelphia Cream Cheese
1 cup of grated sharp cheddar cheese
1/3 cup of dried cranberries
3 shallots chopped finely
1 Tablespoon Worcestershire sauce
1 Tablespoon of Port (optional)
1 teaspoon of smoked paprika
¼ teaspoon onion powder
¼ teaspoon fresh garlic
1 Tablespoons of finely chopped parsley
2 Tablespoons of finely chopped chives
½ cup of walnuts, roughly chopped
(you can add anything you like and be generous)

For the coating

Allow 1 cup of walnuts finely chopped

Place all ingredients except the cranberries & walnuts in a large bowl/mixer and mix until thoroughly combined. Add the cranberries & walnuts and mix with a wooden spoon. Scoop the mixture out and place in the middle of a large piece of cling wrap on your work surface. With the 2 opposite sides of the plastic wrap cover the sides of the cheese mixture. Place your cupped hands against the plastic wrap, and gently press the mixture to form a round ball. Twist the cling wrap gently so it looks like a pouch. Refrigerate and place in a rounded bottom bowl for at least 30 minutes.

For the coating. Prepare a baking tray with baking paper on top. Place the walnuts in the middle and flatten with your hand. Unwrap the cheese ball and gently roll the cheese ball ensuring it is well coated evenly. Place the coated cheese ball in clean cling wrap and place back in the fridge in a rounded bottom bowl to keep its shape. When you are ready to serve, unwrap the cling wrap and place on a serving plate with some crackers and vegies sticks.
