Sweet / Savoury Walnuts

250 grams of walnuts
1 Tablespoon soy sauce
1 Tablespoon lemon juice
½ cup honey
¼ cup caster sugar
1 teaspoon of cinnamon
1/3 cup of olive oil (approx)
3 Tablespoons of milk

In a small bowl combine soy sauce, lemon juice and honey. In a medium bowl pour mixture over the walnuts and mix well.  Best to stand min. for 30 mins or for couple of hours to infuse the flavours. Stir from time to time as the sauce tends to go to the bottom of the bowl.

In a medium sized bowl add the caster sugar, cinnamon and mix well. Drain walnuts in a strainer and toss the walnuts a few at a time in the sugar mixture until well coated. In a medium size non stick pan, add oil on a medium heat. Once the oil is warm add the walnuts a few at a time. Take care not to add any surplus of sugar as it will burn the oil and walnuts. Cook until golden brown, flip them over until golden brown on both sides. Transfer the walnuts individually on some baking paper. Allow them to cool and dry. Once cooled, store them in an air tight container.
