Chocolate Walnut biscotti

Makes approx 25 biscuits 

430 grams plain flour
2 Tablespoon of cocoa
1 teaspoon of baking powder
120 grams castor sugar
100 grams of brown sugar
200 grams walnuts, chopped roughly
3 eggs (approx. 160 grams)
2 Tablespoons olive oil
3 Tablespoons of milk

In a large mixing bowl, sift plain flour, cocoa & baking powder. Add the sugars, chopped walnuts and mix with a wooden spoon.  Make a well in the center of the dry ingredients. Add the wet ingredients in the center and mix with a wooden spoon. The mixture will appear to be clumpy + dry. I usually now put on my disposable gloves and knead the mixture in the bowl until it all comes together in a ball. Usually takes approx a couple of minutes. Turn onto a floured board, knead lightly for a couple of minutes. Roll into a large log and cut into 4 equal portions.

Shape each portion into a loaf shape of min. 15cm in length and no higher than 3 cm. (otherwise they wont cook well.) Flatten with the palm of your hand on top of the log and on the sides shaping them into rectangle shapes.

Bake for approx 20 minutes in the middle of the oven.

Remove and cool on a wire rack. Carefully cut each loaf into slices approx. 1 cm thick. I like cutting them on an angle rather than straight, personal choice. Arrange biscuits flat and bake for 8 -10 minutes until golden brown.  Turn the biscotti’s over and bake for another 8 mins.  You have baked them on both sides.

Cool on wire rack. Store in an air tight container
