Stuffed Mushrooms with Walnuts

2 large mushrooms (stalked removed and chopped finely)
100 grams of any mushroom variety, chopped finely
1/2 cup of shallots, chopped finely
1 clove garlic, crushed
1 egg
1 cup of shredded mild cheese
1/3 cup of roughly chopped walnuts
2 Tablespoons fresh Italian parsley, finely chopped
1 teaspoon mixed herbs
1/3 cup of breadcrumbs
3 Tablespoons of olive oil
Salt + Pepper
Preheat oven at 200C
Line a small baking tray with baking paper
Clean mushrooms on the outside, remove the stalks and season the inside of the mushroom. In a bowl, mix all ingredients (leave 1/3 cup of shredded cheese for the topping) Divide the mixture into the cavity of the large mushrooms.
Place mushrooms on baking tray, add the 1/3 cup of shredded cheese over the mushrooms and bake for 20 minutes until golden brown
Serve with Polenta
