Spiced Walnut Buttermilk Scones

Serves approx 13 medium size

Spiced Walnut Buttermilk Scones440 Self raising flour (sifted)
70 grams butter chopped
30 grams caster sugar
Pinch of salt
1 heaped teaspoon of ground mixed spiced
1 teaspoon of vanilla extract
70 grams of walnuts, roughly chopped
390 grams of full cream milk (reserve 2 tablespoons for brushing scones)
1 tablespoon of white vinegar

Preheat oven to 220 C.

Use a baking tray approx. 17cm x 11cm & prepare baking paper on top

How to make your Buttermilk

In a bowl add full cream milk, vinegar mix and set aside.

In a large bowl add flour, rub in butter with tips of fingers until it resembles to breadcrumbs. Add the rest of the ingredients (remember to reserve 2 tablespoons of buttermilk) Mix gently. Turn out on to a floured board and knead lightly for a couple of minutes. Use a wooden roller to flatten slightly.  Dip your scone cutters in flour so it prevents the dough from sticking. Cut out scones and place on baking tray. Scones can be just touching each other. Brush top of scones with reserve buttermilk.

Bake in the centre of the oven for 18 minutes or until golden brown.

Serve with jam and cream + dust with icing sugar
