Walnut Triple Chocolate Cookies

230 grams unsalted butter
210 grams of white sugar
135 dark or brown sugar
2 eggs (approx 100 grams)
300 grams plain flour (sifted)
40 grams Cocoa
35 grams walnuts, roughly chopped
1 teaspooon of bi carb soda
1 teaspoon Himalayan salt
100 grams white choc chips
100 grams milk choc chips
140 grams dark choc chips
First, preheat oven at 170 C and line 3 baking trays approx. 17cm x 11cm with baking paper
and set aside.
In a large bowl place all the ingredients except the choc chips mix thoroughly until mixture is
smooth. Add the choc chips and mix through. I wear disposable gloves for the next part. Drizzle
a little bit of oil on my hands and rub it in. Take a heaped tablespoon of the mixture and gently
roll into a ball. Place on tray at least one inch apart onto the prepared trays.
Bake approx. 13 minutes. Carefully place cookies on a wire rack with the baking paper. After a
couple of minutes gently remove each cookie from the baking paper and leave them to rest on wire
rack to cool completely. Can be stored in an air tight container. Best served with a hot drink or
anytime for a treat
