Lentil and Walnut Burger (Vegan)

Serves 4

Lentil and Walnut Burger (Vegan)*½ red onion chopped finely
*½ Teaspoon Himalayan salt
* 1 piece bread toasted/or 1/3 cup
breadcrumbs/or 1/3 cup of rice
*1/3 cup of water
*1 Tablespoon ground cumin
*2 Tablespoon fresh coriander
*2 cloves garlic
*1/4 teaspoon of ginger or fresh ginger, grated
*2 Tablespoon of soy sauce
*4 Tablespoons of olive oil
400 grams lentils
(Fresh lentils need to be soaked overnight
& cooked OR use 1x 400 gram canned lentils)
**Reserve 1/3 cup lentils
80 grams walnuts, toasted & roughly chopped
Olive oil for frying
½ avocado, sliced or mashed
Tomato, cucumber slices & lettuce leaves

In a food processor, keep 1/3 cup of lentils aside. Add the first 10 ingredients marked (*) process
until you reach a smooth paste. In a large non stick frypan add a drizzle of oil, add the onions fry
till golden brown then add the paste from the food processor and mix well with a wooden spoon.
Transfer mixture to a large mixing bowl and add the lentils you have set aside and the walnuts. Mix
well until all combined. Taste and adjust salt, spice, herbs, if needed.

Shape into large patties. Warm your frypan with the oil and cook each Pattie for approx. 4 mins on
each side. Prepare your hamburger with a vegan mayonnaise, sauce/dressing of your choice. Add
your avocado to your bun, lettuce, tomatoes, cucumber slices and your pattie. Serve with Kumara
fries or on its own.
