Walnut and semi dried tomato pesto

3/4 cup roughly chopped walnuts, toasted
1/2 cup chopped semi dried tomatoes
1/2 cup olive oil
2 teaspoons walnut oil
1/4 cup finely grated parmesan
2 teaspoons fresh thyme
cracked black pepper
vegetable sticks, to serve
Place the walnuts and tomatoes in the bowl of a small food processor and pulse until combined. Add the parmesan and thyme leaves.
With the motor running, slowly pour the combined oils in until mixture is finely chopped and fully combined.
Season with cracked black pepper and serve with fresh vegetable sticks or as accompaniment to chicken or seafood.
